How Pad Thai – Davids long loved go-to dish – is made.

I don’t know how many of you have noticed this, but back home we used to make Pad Thai at least once a week. Our version is very different from the one made here in Thailand though and so I am super happy to finally have an original recipe. Here is Pad Thai as made by Pure:

Ingredients:

  • About 2 pieces of fresh tamarind
  • 1 tblsp of (palm) sugar – if you use a different one, you might have to change the amount.
  • Soy sauce
  • Onion
  • Tofu
  • Pad Thai noodles
  • roasted peanuts
  • Optional: soy sprouts, carrot, other vegetables, egg, spring onion, thai basil, mint

This dish is best prepared in a wok.

Step one: For the tamarind sauce remove the shell and seeds of your tamarind and place it into a bowl. Then add hot water and stir and squeeze until it gets a paste like texture. Add the sugar and stir again.

Step two: Cut the onion, tofu and optionally other vegetables. Then fry the onion and add the rest once it turns glassy.

Step three: Add about one glass of water and the noodles to your fried vegetables and cook the noodles until they are ready. If necessary, add more water.

Step four: Add the prepared tamarind sauce and some soy sauce to your dish. You might want to add some salt, pepper or chilli.

Step five: Serve with the roasted peanuts and optionally some fresh soy sprouts, spring onion and herbs.

What do you think, is this something you might try at home? We love Pad Thai, even though we had a lot of it and are glad to take a break, now that we are leaving Thailand. However, I will definitely try to recreate this at home. This dish can be prepared astoundingly fast, tastes delicious and (especially if you put little to no sugar) is healthy. In Thailand it is one of the dishes found most commonly as street food and has a reputation as being THE tourist dish. As you can easily dose the amount of chilli you add in the end or after serving, it can be adapted to a wide variety of spice tolerance and even the peanuts are often served in an extra bowl, so you can easily skip them.
